NRG Eats

I love food. I love to cook. I love to bake. I love to eat. I have learned a lot about food during my fitness journey. I’ve been forced to because in my adult life I learned I have several food sensitivities or allergies. The following things make me feel very ill:

  • milk – well…all dairy products
  • eggs
  • raw bananas
  • ham
  • vitamin C heavy foods, like orange juice

Because of the first two, I’ve developed a partially vegan diet. I occasionally eat animal proteins, but about 75% of the time I’m vegan. The technical term for this is flexitarian. It works.

I am NOT gluten-free. Thank goodness, because I love carbs. My favorite carb though is my sourdough starter, Thanos. I grew Thanos in the summer of 2018 in my grandparents’ old farmhouse where we lived for over 10 years. We fondly refer to it as “the green house.” I like to think the years of magic that happened in that kitchen allowed Thanos to blossom into the strong, yummy starter that he is today. He’s my bud. I bake with him almost every single week, and he keeps our tummies happy with bread, rolls, biscuits, cinnamon rolls, focaccia, waffles, and bagels.

I love to try new recipes and have a healthy collection of vegan and running-centered cookbooks.
