Calorie Deficit – Not for this runner apparently!

In my last post, I said I was starting to use My Fitness Pal to track calories. A big part of me wants to weigh 130lbs. But after Friday’s long run, I think I need to throw in the towel. I felt awful. My fingers got tingly. I felt out of breath. My muscles just didn’t have enough juice to keep up the pace. My body seems happy at 135…very happy. I occasionally fluctuate up to 136 or 137 during a training cycle. AND THAT’S OK!

I didn’t really track anything to get to where I’m at. I just made slow changes over time. I’m not really sure there’s any changes left to be made. I’m constantly working on getting my diet as clean as can be, but I still like carbs and treat myself every now and then. Poptarts are my cryptonite, but I have managed to succeed in limiting myself to one.

That being said, I am still going to track my calories and record what I eat. It’s definitely an eye opener to have to write down everything. I am also working on spacing my eating throughout the day. That way I don’t feel the need to stuff myself when lunch and dinner time hits.

This is what 430 calories of whole wheat pasta, red sauce (Runner’s World marinara, of course!), meatballs, and broccoli looks like. YUM! I made freezer meals to control my portions.

We found this at Sam’s in the freezer section over the weekend. I made it for lunch yesterday. It has two servings in each little steamer bag. Mr. Neon and I had it with meatballs and a little red sauce. Easy peasy. I like that Sam’s is starting to get more choices like this. Our Costco should open sometime this summer. I can’t wait!

The boys got some Valentine’s Day money from their great grandparents. Tiny Boy wisely spent his on the new Hulk bear from Build a Bear. He is a certified Build a Bear addict. He has his own personal assistant at Build a Bear. He’s on a first name basis with her, which makes me laugh. This bear is a hoot. He has pecs, abs, and muscles! The Thor bear and the Iron Man bear come on next month sometime, and Tiny Boy is already talking about saving his birthday money for them!

I got a new toy for Valentine’s Day. We’ll call it runner’s jewelry. It’s a Mio Link heartrate monitor. It’s pretty darn awesome! DC Rainmaker gave it a glowing review. I have always thought using heartrate for training effort and more accurate calorie burn was pretty cool, but I HATED my chest strap with a fiery passion. It restricted my breathing, would lose connection easily, and ate through batteries. This little bad buy has a rechargeable battery, goes on my wrist, and is more accurate.

The only downside is now there are a lot of things on my wrists. Mr. Neon giggled at me this morning when we got ready for the gym, because I had my Garmin Vivofit and 220 on my left wrist, and my RoadID and my Mio Link on my right wrist. My wrists are tiny, so it probably does look silly to have all these gadgets strapped to them.

Tiny Boy is breathing down my neck to play Minecraft, so it’s back to laundry for me! Happy Monday!! Have a great week!

Mr. Neon has today off. We are about to head out to do 10 miles. Not sure if we will wimp out and head for the longest indoor track in the city. Six laps to a mile! It’s supposed to warm up, but not until much later in the afternoon and we got stuff to do. Chipotle, a little shopping, and Mr. Neon’s Valentine’s Day present. We are going to get his wedding ring sized down. He can’t even wear it anymore because it literally falls off.

I’m back to tracking my calories on My Fitness Pal. Username is neonrunnergirl if anyone is interested in following along. I went over yesterday by 131 calories. Still within my deficit, and it was worth it. This is why I went over…

I finally mastered my Vegan Everything Cookie! They aren’t exactly like the Whole Foods ones. I think they are better. And these aren’t the kind of cookie that you necessarily want to eat right out of the oven. I waited until they had cooled a little. They were soft on the inside, but the outside is slightly crispy. So good.

Here’s the recipe…

Neon Runner Girl’s Everything Vegan Cookie

3 flaxseed eggs (3 Tbsp flaxseed meal + 9 Tbsp warm water)
1 cup non-dairy margarine (I use Earth Balance Soy Free.)
1 cup brown sugar
1/2 cup white sugar
2 tsp vanilla
1 cup unbleached all purpose flour
1 cup white whole wheat flour
1 cup oat flour
1 tsp baking soda
1 tsp salt
1 cup dark chocolate chips
1 cup chopped walnuts
1 cup unsweetened flake coconut
1 cup raisins

In a small bowl, mix the flaxseed meal and the warm water together and set aside. Allow to soak for 8-10 minutes.

In a stand mixer, cream the margarine and sugars together. Add vanilla and flaxseed eggs and mix until well combined.

Add in flours, soda, and salt. Mix until combined and uniform.

Stir in chocolate chips, walnuts, coconut, and raisins with a big spoon or spatula.

Bake at 350 for 12-14 minutes or until lightly golden brown. Allow to cool on cookie sheet for 1-2 minutes before removing. Cool before storing.

Makes about 40 cookies with a medium 1.5 Tbsp cookie scoop.

PiYo Interuptus

So last Thursday was Kansas Day. Happy Birthday, Kansas! Being the good teacher’s wife that I am, I made Mr. Neon’s fourth graders homemade bread to eat with the butter that they would make in class. I came home from work Wednesday night and decided to slice the bread before bed, instead of getting up early and doing it during the rush of getting the boys on the bus. I wasn’t in a hurry. I was almost done. I only had two slices on the last loaf left. Mr. Neon was talking to me. I turned my head to respond to something he said. And I sliced my left pointer finger. As soon as I did it, I knew it wasn’t one of my usual clutsy cuts. It was deep. It needed stitches. But it was 11pm on a Wednesday night. The only thing open was the ER. Dr. Google told us we could wait until the morning. I somehow managed to sleep with my finger tightly wrapped with a Spongebob bandaid.

Thursday morning I went to my doctor, and she stitched the cut closed with one little stitch. That one little stitch has caused me grief! I couldn’t do PiYo for a few days because downdog and plank made it stretch and pull. Dumb. I’m typing with 9 fingers. Try it. It’s a pain in the butt. Tiny Boy has been doing PiYo for me. Isn’t his downdog the cutest?!

I’m sitting here drinking my Vega One. I need to do a post about this stuff and tell you all about it. I love it. I’m a little obsessed. Whole Foods had it on sale last month and I stocked up!

So many yummy flavors!

The other big news is that I got selected to be part of the the Honey Stinger Hive! I applied on a whim and I got it! I LOVE these products. I have used them from the very beginning of my journey. Me…a sponsored athlete?! Someone pinch me!

I’ll just leave this here. Even though I don’t use disposable menstrual products (another post for another day), the Always “like a girl” ad was my favorite. GIRLS ROCK!

Happy Tuesday, all!
